Cinnamon rolls | Cynamonowe bułeczki



Cinnamon rolls are classics among breakfast ideas . A good recipe for this delicacy must be included in any kitchen. This one is amazing, the buns are moist, soft and delicious!

Ingredients:
(makes 12 rolls)

Dough:
  • 650 g flour (recipe called for 600g but that wasn't enough)
  • 80 g sugar
  • 1.7 oz fresh or 0.7 oz instant yeast
  • 3.4 oz butter
  • 400 ml milk
  • 2 eggs
  • 1/2 teaspoon salt
+ 1 extra egg (for brushing)

Cinnamon filling:
  • 5 oz unsalted butter, softened
  • 5 oz sugar
  • 1 1/2 teaspoons cinnamon
Frosting (optional):
  • 4.2 oz cream cheese
  • ½ cup granulated sugar
  • 2-4 tablespoons of milk (depending on the consistency of frosting – it should be be creamy but not too thick, it should a gently flow down the rolls)
Preparation:

For the cake: mix flour with sugar and salt. In the middle of the dry ingredients make a hole, break yeast to it (I used the fresh ones). Place eggs in a medium-size bowl and beat them slightly. Add milk and melted butter to beaten eggs and mix well. Pour liquid mixture into dry ingredients and knead the dough until it’s soft and elastic. Cover the dough with a cloth and leave in a warm and quiet place for 30 minutes.

In a small bowl combine all the ingredients for the filling and mix well. Set aside.

When the dough has risen, pin out one third of it to rectangular shape (or whatever shape your baking pan is – I used rectangular pan, dimensions: 12x9 inch)- you just created the bottom of the rolls. 
On a lightly floured board pin out the rest of the dough to a rectangular shape. Spread the cinnamon filling evenly, fold along the longer side and cut into 1,5 inch slices. Place buns on the prepared bottom and set aside again to rise for about 20 minutes. 

During this time, heat up the oven to about 450 F. 

Just before putting buns into the oven brush them with beaten egg. Bake for 20-25 minutes.

Mix well all the ingredients for frosting. Spread the frosting over slightly cooled rolls and they are ready to serve!

Cynamonowe bułeczki to śniadaniowy klasyk. Dobry przepis na ten przysmak musi znaleźć się w każdej kuchni. Ten jest sprawdzony, a bułeczki wilgotne, miękkie i pyszne! Polecamy!

Składniki:
(na 12 bułeczek)

Ciasto drożdżowe
  • 650 g mąki pszennej (przepis podawał 600g, ale według mnie to za mało)
  • 80 g cukru
  • 50 g świeżych lub 21 g błyskawicznych drożdży
  • 100 g masła
  • 400 ml mleka
  • 2 jajka
  • 1/2 łyżeczki soli
+ jajko do posmarowania

Nadzienie:
  • 150 g miękkiego masła
  • 150 g cukru
  • 1 1/2 łyżeczki cynamonu
Lukier (opcjonalnie):
  • 125 g serka kremowego
  • ½ szklanki cukru pudru
  • 2-4 łyżek mleka (w zależności od konsystencji – lukier ma być kremowy ale nie za gęsty, ma delikatnie spływać z bułeczek)
Przygotowanie:

Mąkę wymieszaj z cukrem i solą. Na środku suchych składników zrób dołek, pokrusz do niego drożdże. W średniej wielkości misce roztrzep jajka. Dodaj do nich mleko i rozpuszczone masło, dokładnie wymieszaj. Tak powstały płyn wlej do dołeczka z drożdżami i wyrób na miękkie i sprężyste ciasto. Gotowe ciasto przykryj ściereczką i odstaw w ciepłe i ciche miejsce na ok. 30 minut.

W tym czasie w niedużej miseczce wymieszaj wszystkie wyżej wymienione składniki na nadzienie.

Gdy ciasto wyrośnie, 1/3 rozwałkuj na kształt blaszki (o wymiarach ok. 30x24 cm) – w ten sposób tworzymy spód bułek. Resztę ciasta rozwałkuj na oprószonej mąką stolnicy na prostokąt. Posmaruj równomiernie nadzieniem, zwiń w rulon wzdłuż dłuższej krawędzi i pokrój na około 4 cm krążki. Tak przygotowane bułeczki ułóż na przygotowanym spodzie. Ponownie odstaw do wyrośnięcia na 20 min. 

W tym czasie nagrzej piekarnik do 230 st. C. Tuż przed włożeniem bułeczek do piekarnika posmaruj je roztrzepanym jajkiem. Piecz przez 20-25 min.

Kiedy ciasto jest w piekarniku dokładnie wymieszaj wszystkie składniki na lukier. Na koniec polej nim lekko przestudzone bułeczki.
