Old-fashion Long Maturing Gingerbread - Stage 2 | Piernik Staropolski Dlugo Dojrzewajacy - Etap 2


Christmas is almost here so its high time to bake our Long Maturing Gingerbread! 
 3-4 days before Christmas is the best time for baking the Gingerbread.

There are several schools and a lot of possibilities, here are my two favorite options:


OPTION 1: 3-layer Gingerbread 
OPTION 2: 2-layer Gingerbread, gingerbread is lower but we have enough dough for Gingerbread COOKIES! - that was my choice this year!

OPTION 1: 3-layer gingerbread

Ingredients:
  • long maturing gingerbread dough prepared with this recipe
  • 3 cups plum mamrolade (or any other flavor of marmolade)
  • double or triple the ingredients for chocolate glaze from this recipe - optional
Preparation:

Preheat oven to 340 degrees F.

Divide the dough into 3 equal parts. Prepare baking form/forms (dementions (more or less): 14x9 inches). Unfortunately, I have only one form so I have to bake one layer after another but if you have 3 same-size forms, it will be easier for you ;). Grease each form and line it with baking paper.

Roll out each part of the dough so it has rectangular shape that will fit the backing form. Transfer the dough into the mold and bake for about 20 minutes.

Remove from oven and allow to completely cool.

Place first layer of the cake on the bottom of the form, cover evenly with half of the marmolade. Proceed the same with second layer of the cake and marmolade. Cover with the last layer of cake, cover it with baking paper and load evenly with some weight, books are best. Place the gingerbread in a cool place - the fridge - for additional 3-4 days.

After this time well rested gingerbread can be covered with chocolate glaze from this recipe, but it's optional. After a few weeks of waiting, you can finally try THE Gingerbread!

OPTION 2: 2-layer Gingerbread + about 90 Gingerbread COOKIES! - that's what I did!

Ingredients:

  • long maturing gingerbread dough prepared with this recipe
  • 1 2/3 cup plum mamrolade (or any other flavor of marmolade)
  • double or triple the ingredients for chocolate glaze from this recipe - optional
+ milk for brushing cookies before baking 

Preparation:

Gingerbread

Preheat oven to 340 degrees F.

Divide the dough into 3 equal parts. For the Gingerbread we will only need 2 out of 3 parts. (The third part we will use for cookies.) Prepare baking form/forms (dementions (more or less): 14x9 inchs). Gingerbread COOKIES - you can bake these the same day as gingerbread or later, as you prefer. Anyway, they will be delicious!

Devide the third part of the dough into 2 or 3 parts, it will be easier to roll it out. Roll out each portion to a thickness of about 0.5 centimeter and cut out the cookies with your favorite molds. Arrange on a baking tray lined with baking paper and bake for about 7 minutes (time depends on the size of molds, cookies should be browned on the sides but still soft in the middle, then you know they are ready). Remove from the oven, allow to cool and serve or store in a tightly closed can.

Już zaraz Święta! Jak co roku nadchodzą zupełnie niespodziewanie ;) Nadeszła pora by upiec nasz długo dojrzewający piernik! Najlepiej piec go 3-4 dni przed Świętami.
 Jest kilka szkół i wiele możliwości, oto moje ulubione dwie opcje:

OPCJA 1: 3 warstwowy PIERNIK, wysoki piernik
OPCJA 2: 2 warstwowy PIERNIK, piernik jest niższy ale mamy dość ciasta na PIERNICZKI!

OPCJA 1: 3-warstwowy piernik

Składniki:
  • długo dojrzewający piernik z tego przepisu
  • 1 kg powideł węgierkowych
  • podwójna lub potrójna ilość składników na glazurę czekoladową z tego przepisu - opcjonalnie
Przygotowanie:

Rozgrzej piekarnik do 170 stopni C.

Ciasto podziel na 3 równe części. Przygotuj blachę/blachy o wymiarach około 36x23 cm. Ja niestety mam tylko jedną blachę także muszę piec jeden blat po drugim ale jeżeli masz 3 blachy o tych samych wymiarach to jesteś w lepszej sytuacji ;). Każdą blachę posmaruj masłem i wyłóż papierem do pieczenia. 

Każdą z części ciasta rozwałkuj na kształt prostokąta, tak by zmieściło się w blaszce. Przenieś ciasto do formy i piecz przez około 20 minut. 

Wyjmij z piekarnika i pozostaw do całkowitego wystudzenia.

Blaty przełóż powidłami, ostatni (wierzchni) blat przykryj papierem do pieczenia i obciąż równomiernie najlepiej książkami. Tak przygotowany piernik odstaw w chłodne miejsce - do lodówki/sieni - na 3-4 dni. 

Po tym czasie wyleżakowany i wypoczęty piernik możesz pokryć glazurą czekoladową. Odstaw do zastygnięcia i GOTOWE! Po kilku tygodniach oczekiwań możesz w końcu wbić ząbki w piernik! 

Smacznego!

OPCJA 2: 2-warstwowy piernik + około 90 PIERNICZKÓW

Składniki:
  • długo dojrzewający piernik z tego przepisu
  • około 600 g powideł węgierkowych
  • podwójna lub potrójna ilość składników na glazurę czekoladową z tego przepisu - opcjonalnie
mleko do posmarowania pierniczków

Przygotowanie:

PIERNIK

Rozgrzej piekarnik do 170 stopni C.

Ciasto podziel na 3 równe części. Przygotuj blachę/blachy o wymiarach około 36x23 cm. Ja niestety mam tylko jedną blachę także muszę piec jeden blat po drugim ale jeżeli masz 2 blachy o tych samych wymiarach to jesteś w lepszej sytuacji ;). Piekarnik rozgrzej do 170 stopni C.

Pozostałe ciasto (to jest 1/3 całości) podziel na 2 lub 3 części, chodzi o to by Ci się je swobodnie wałkowało. Rozwałkuj każdą część na grubość około 0.5 centymetra i wycinaj pierniczki za pomocą ulubionych foremek. Układaj pierniczki na blasze wyłożonej papierem do pieczenia, a następnie piecz przez około 7 minut (długość zależy od wielkości foremek, pierniczki mają być rumiane na bokach ale ciągle miękkie na środku). Wyjmij z piekarnika, ostudź i podawaj lub przechowuj w szczelnie zamkniętej puszce.

    Thank you so so much for posting the long-maturing piernik recipe. I only learned about it recently and was immediately really interested in trying it, but it was hard to find a recipe, especially in English!! I made cookies too and they are wonderful.
    I have a question - after you cake the cake, how long does it last before it is too old to eat? Thank you

      I'm happy to hear you like the recipe!

      When it comes to cakes 'freshness' it basically depends on the chocolate glaze. If the gingerbread is not covered with glaze it will last easily up to a month. Just rememebr to wrap it in baking paper and kitchen rag. But if it is covered with the glaze, it should be consumed in 2-3 days, and stored in the fridge. :)
