Warm Veggie Salad&Pork Tenderloin | Sałatka na Cieplo&Najprostsze Poledwiczki


We were stuck in the period somewhere in between winter and spring, which means we are thinking about loosing weight we gained during winter and lighter dishes but it's still quite chilly outside. This recipe is perfect for this time of the year. Here you have a healthy salad served with lean meat - tenderloins. We care about both your diet AND the taste buds! It's a must try!


Ingredients:
(for 4 servings)

Salad:
  • 2 medium-size sweet potatoes
  • 5 medium-size carrots
  • 1 big zucchini
  • 1 onion (white or red)
  • 200 g baby spinach
  • handful of fresh parsley
  • 5 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon mustard
  • salt and pepper to taste
(Version without meat: You can substitude meat with about 100-150 g of goat cheese and a handful of your favorite nuts.)

Tenderloin :
  • 2.2 lbs pork tenderloin (2 large or 3 small ones)
  • 1 tablespoon olive oil
  • large pinch of salt and pepper
Preparation:

Preheat the oven to 400 degrees C.

Wash and peel sweet potatoes and carrots, then cut into long pieces (about 0.4x2 inch). Wash and cut zucchini (cut long pieces as you did with potatoes and carrots). Cut onion cut into halfs and then slice. Place vegetables in a baking dish covered with baking paper, spread evenly, season with fair amount of pepper and put into preheated oven for about 30 minutes. Flip vegetables 3-4 times during baking. After about 20 minutes of baking turn on the grill function in the oven.

Season tenderloins with salt and pepper using olive oil as a 'glue'. Carefully massage the spices into the meat. Place grill pan over high heat, we need it to be very hot. Fry the tenderloins, make sure that you haven't miss a spot. Place pre-fried meat on a baking sheet lined with baking paper and bake for about 20 minutes. Tenderloin and vegetables should be ready about the same time.

Back to the salad: at the bottom of a large salad bowl, prepare dressing, combine: olive oil, lemon juice, mustard and season with salt and pepper. Add baby spinach to the bowl, but do not mix it with dressing just yet, you will do it when you add veggies.

When the vegetables are soft, take them out from the oven and throw them straight into the bowl with the dressing and spinach. Mix all the ingredients thoroughtly.

Take the tenderloins out of the oven. Let them rest for few minutes, so all the juices stay inside them. Then cut into slices of desired thickness. Serve with salad.

Utknęliśmy w okresie zimowo-wiosennym, czyli już myślimy o dietach i lżejszych potrawach a na zewnątrz ciągle chłodno. Ta propozycja to recepta na tę porę roku. Mamy tutaj zdrową sałatkę na ciepło, podaną z chudym mięsem jakim są polędwiczki. Dbamy o linie i kubki smakowe! Koniecznie spróbujcie!!

Składniki:
na 4 porcje

Sałatka:
  • 2 średniej wielkości bataty
  • 5 niewielkich marchewek
  • 1 cukinia
  • 1 cebula (może być biała lub czerwona)
  • 200 g młodego szpinaku
  • garść świeżej natki pietruszki
  • 5 łyżek oliwy z oliwek 
  • 2 łyżki soku z cytryny 
  • 1 łyżeczka musztardy 
  • sól i pieprz do smaku
(jeżeli nie chcecie sałatki podawać z mięsem tylko solo sugeruję dodać około 100-150 g sera koziego i garść ulubionych orzechów doda jej to wyrazistości i 'zastąpi' dodatek jakim jest mięso)

Polędwiczki:
  • 1 kg polędwiczki wieprzowej (2 duże lub 3 mniejsze)
  • 1 łyżka oliwy 
  • duża szczypta soli i pieprzu
Przygotowanie:
Nastaw piekarnik na 200 stopni C. 

Bataty i marchewki umyj i obierz, a następnie pokrój w słupki (około 1x5 cm). Cukinie umyj i również pokrój w słupki tej wielkości. Cebulę pokrój w piórka. Wszystkie warzywa umieść na blasze wyłożonej papierem do pieczenia, rozłóż równomiernie, przypraw sporą ilością pieprzu i wstaw do nagrzanego piekarnika na około 30 minut. W międzyczasie obracaj warzywa 3-4 razy. Po około 20 minutach pieczenia włącz funkcje grilla w piekarniku.

Polędwiczki dopraw solą i pieprzem, używając oliwy jako 'kleju'. Dokładnie wmasuj przyprawy w mięso. Bardzo mocno rozgrzej patelnię grillową. Na patelni obsmaż dokładnie polędwiczki, dopilnuj by były obsmażone ze wszystkich stron. Tak przygotowane mięso umieść na blasze wyłożonej papierem do pieczenia i piecz około 20 minut. Polędwiczki i warzywa powinny dojść mniej więcej w tym samym czasie.

Na dnie dużej miski do sałatek przygotuj dressing, połącz: oliwę, sok z cytryny, musztardę i dopraw solą i pieprzem. Na dressingu umieść listki młodego szpinaku, ale nie mieszaj jeszcze całości, zrobisz to kiedy dodasz gorące warzywa.

Kiedy warzywa są miękkie, wyjmij je z piekarnika i przerzuć prosto do miski z dressingiem i szpinakiem. Całość wymieszaj tak by wszystkie składniki dokładnie się wymieszały. 

Wyjmij polędwiczki z piekarnika. Odłóż je na chwile by 'odpoczęły'. Następnie pokrój na plastry dowolnej grubości. Podawaj w towarzystwie sałatki.
